I am the self proclaimed FEARLESS leader of the FRB's RED HOT PINK CHICKS!!! Our Motto's are- 2010 "Diamonds and Titanium, Thats what we are made of!"  2009 "We are water-proof-dye-in-da-blue-crazy-nut'n-gonna-stop-us-fun-lovin'-red-hot-pink-chicks!!!" 

The next official RHPC event is the RHPC 1/2(5k, 10k, 10 miler) July 16th, 2011.   PLEASE join us !!!

I started running in May of 2006 while losing 85 lbs after my youngest was born.  I have 6 fantastic kids, 3 girls and 3 boys and a wonderful husband.  My oldest is in college and my baby is in pre-school. (Six kids in 5 schools ;)

The RHPC 1/2 was today :)  It went GREAT!  What a fun group of ladies and AWESOME guys!  thanks to Rachel and Adam for doing the timing :)  Thanks to Maurine for the "dude" and "virgin" awards!  Thanks to Luz for the BLING!!!  Thanks to Michelle for the cups.  Thanks to all the water bringers :)  THANKS for the WONDERFUL food!  YUMMY!!!

Here is a Cowboy Caviar recipe.  YUMMY!!!  I actually prefer use frozen corn ;)  ..and I just use lime juice, salt and pepper for the dressing :)  Maybe some cumin.

Cowboy Caviar

Nutritional Info
  • Fat: 1.7g
  • Carbohydrates: 8.8g
  • Calories: 56.7
  • Protein: 2.5g

Ingredients

2 (15oz) cans black beans, rinsed
1 (17 oz) can whole kernel corn, drained
2 large tomatoes, chopped
1 large avocado, diced
1/2 red onion, chopped
1/4 cup chopped fresh cilantro
Dressing
1 Tbsp red wine vinegar
3-4 Tbsp lime juice
2 Tbsp olive oil
1 tsp salt
1/2 tsp pepper
Directions

1. Combine all ingred. in bowl.
2. Cover and chill.
3. Garnish with avocado slicesor cilantro sprigs.
4. Serve with tortilla chips

Smooth: I made the quinoa salad. It is from a weight watchers cook book but I tweeked it a bit.

Bring two cups of water to boil with 1/4tsp salt. Add 1 cup rinsed drained quinoa let simmer until transparent about 15 minutes, set aside to cool.

3 cups strawberries

3 kiwi

2 cans drained mandarin oranges

Dressing: 1- 4oz activia light vanilla yogurt blended with about 2 TB of orange concentrate. Mix with fruit first then add quinoa when cool and mix.

Hiya Marion. Thank you so much for inventing this race for us. I've so looked forward to seeing everyone again in their blinged out pinkness, the rooster,and the food. It was worth the wait. It was so great to see you guys. You've been so busy, and things have been rough these past few weeks. I wish I lived closer to be of more help. You are the best. Thanks especially for that Quinoa fruit salad. I want to eat at your restaurant. You really know and love good food. I love that. Take good care, it was so good to see you.
