I started running in May of 2006 while losing 85 lbs after my youngest was born.  I have 6 fantastic kids, 3 girls and 3 boys and a wonderful husband.  My oldest is in college and my baby is in pre-school. (Six kids in 5 schools ;)

Last week was a good week.  Only one headache, well probably two, but better than the previous week.  I think water was the problem.  I also went to the health food store and bought a bunch of quinoa (KEEN- wah).  I bought the whole quinoa and noodles made of it too.  I also bought several vitamins too.  My hair has quit growing in the last 6 months.  I am guessing it is from the increased activity using up all of my nutrients.  (my hair used to grow about an inch+ a month, now it is growing about an inch every 10 weeks)  Hopefully over time, I will get used to this level of activity.  I am noticing that I really do not tolerate "garbage" at all any more.  A little is fine, here and there, but more than that makes me straight away sick.

OK- I need your quinoa recipes.  I am making "Rice with Eggplant and Potatoes" for dinner tonight, courtesy of KungFuBlonde and Montelepsy.  It is one of their family favorites and I am sure to be one of ours too.  Thanks again guys!  If you want the recipe, I'll PM it too you.

I am planning on running 25 miles again this week.  I'll be out of town for a few days and Michelle is going to do a training run with me on Thursday.  I don't want to over do anything, so I figured, I'd stick with the lower miles for this week.  I posted somewhere that I was going to stick with the 25-30 mile weeks, until I get 10 lbs off.  Then I will up my miles by 5.  Once I get 10 more off, I will add 5 more miles a week.  I am not sure what this plan is called, but it feels right.  I am also going to do a time trial 5 k every 10 lbs.  It will be an interesting study.

Dinner report-  WOW!!!  That recipe was FANTASTIC!!!  I went to the store 2 times yesterday to get an eggplant and FORGOT each time.  So I took it as a sign and did extra firm tofu and potatoes.  I also did 2 C uncooked basmati rice and 1 C uncooked quinoa cooked in chicken broth in my rice cooker.  Holy cow!!!  I did have extra rice :)  Even my "rice hater" husband had seconds.  My baby gobbled it up.  My girls were a bit hesitant, but all loved it!  My super picky 11 year old kept going back for more.  Whoo hoo!!  The recipe is below in the comments.  There is a bit left over for my lunch tomorrow!  YEAH!!!  Thanks to Rachel (kungfublond)!  We can see why this is Mike's favortie recipe!!!

Here it is- I hope RAchel does not mind :)

I like basmati rice or long grain. And you can substitute 1/2 block of extra firm tofu, cubed, for the eggplant. Or use potato, eggplant and a little tofu, if you want to test it out gradually :) Rice with Eggplant and Potatoes(t= teaspoon, T= tablespoon) 1 2/3 cups long grain rice (wash, soak 30 minutes, then drain)2 1/2 cups water1 1/2 t salt1 t turmeric1 T coriander1/2 cayanne, 1/2 t sugar1 T lemon juice1/4 c butter12 oz. red potatoes (3 or 4), cubed1 large eggplant, cubed1/4 c butter, melted heat oven to 350 After rinsing the rice, place it in a saucepan with water and 1 t salt and bring to a boil. Stir, reduce heat to low, cover. Let simmer 15-20 minutes, until water is absorbed. (I now just do this part in my rice cooker). Set cooked rice aside. In a small bowl, combine all spices, lemon juice and 1/2 t salt salt. Stir to make a paste. Melt butter over moderate heat in a large frying pan. Add potatoes and eggplant. Stir frequently for 5 minutes, then add spice paste and stir constantly for 10 minutes. (if it gets too dry, add water by the tablespoon). Cover pan and reduce heat to low and let cook until potatoes are tender (usually 15 minutes) In a casserole dish, layer half the rice, half the melted butter, all the potatoes/eggplant, the rest of the rice and the rest of the butter. Cover with lid or foil and bake for 25 minutes.

Marion- I love quinoa. I usually do a simple side dish of quinoa made with a vegetable stock, and mushroom, garlic and onion. You can sautee the veggies first in olive oil, then add them to the quinoa once it is almost fully cooked. Good luck- you are an inspiration. I am going out for a jog to test the ankle.

Ha ha, quinoa. One of my professors studies quinoa and is completely obsessed with it. It's hilarious.

Does it actually taste good? And could you use it as a breakfast food?

As for increasing the mileage, it sounds like a great plan.

I mixed the quinoa with rice in my rice cooker. It's hard to tell it's there. It would be great for breakast. Maybe find some recipes online. One person told me to cook the quinoa (1 C quinoa, 2 C water) simmer 10-15 min. Then saute some mushrooms and onions. Mix it together. I saw a recipe on line where you cook the quinoa. let it cool,a nd mix in diced cucumbers, cillantro, tomatoes and avacado with an itallian dressing of choice.

Check out future posts. I bought pasta made from it too and am going to try it this week. Good times :)

The buffalo was left over from the Buffalo Run in March (j/k). Actually, I now have room for some of the canning stuff I have and also some I inherited from my mother. My sister is able to slowly chew jerky, but needs food to be low fat, so this will work for both of us.

I feel so ambitious - I actually cooked a dinner (ok - so it was steak and french bread dipped in olive oil and balsamic vinegar), peeled a pomegranate, am packing lunch for tomorrow, got the jerky drying and did ALL my dishes.

I'm trying to stay busy so I can pretend I have a life.

I am still playing catch-up from my weekend away, so I'm just now seeing this blog. Love it! I don't mind you sharing at all. It's kind of funny to see my mom's recipe that I grew up eating being shared all over the place. It's nice :)

My mom never used tofu, just eggplant and potatoes. I starting subbing the tofu because my kids don't like eggplant. Now they do, so I use it ALL!

I also make these crabcakes with no crab, tofu instead. They are curried and rolled in cornmeal. SO yummy! I will start bombarding you with recipes, Marion. And no, not everything I cook involves curry :)
